Aside from being a Michelin-starred restaurant in Bangkok with numerous awards, Royal Osha has received a wide range of reviews from both Thai and international diners who have experienced their services through various channels. This includes reviews from food bloggers who specialize in food critiques. The reviews from these food bloggers who have come to savor the authentic Thai flavors at Royal Osha are as follows:
“Goohiw”
Royal Osha is a fancy fine-dining restaurant on Witthayu Road, near Sarasin Junction. The place is stunningly decorated, making it perfect for special dinners or hosting guests. It’s an excellent spot to bring foreign visitors. The walls are covered with wallpaper depicting scenes from the Ramakien, which looks absolutely impressive. There’s a huge, beautiful chandelier shaped like a traditional Thai headdress, which is a unique feature of the restaurant. The decor is elegant and subtly incorporates Thai charm, catching your eye wherever you look.
Their traditional royal Khao Chae (rice soaked in cool jasmine-scented water) is fantastic, both in taste and experience, living up to its reputation. The Tiger Prawn Ceviche with cucumber and green chili lime granita is made from fresh, springy prawns without any fishy smell. The sauce is spicy and well-balanced, with moderate heat, though it might be quite spicy for foreign tastes.
To finish, you have to try the Riceberry Balls stuffed with caramelized coconut in aromatic coconut milk. This dessert features traditional Khanom Ko in coconut milk, topped with crispy riceberry puffs. The bottom layer is soft dough with salty-sweet grated coconut inside, offering a fragrant aroma and a sweet taste from coconut sugar. When you eat it all together, it’s delicious and very fragrant.
“Eat Chill Wander”
Last year was a golden year for fine dining Thai food! Thai restaurants have gained more recognition, thanks in part to the Michelin Guide, which made us realize that Thai cuisine is second to none. Royal Osha is one of those upscale Thai fine dining spots that’s worth checking out. This restaurant has won numerous awards both domestically and internationally. Originally, it was a branch of the famous Osha Thai restaurant chain in San Francisco, which has over nine branches.
They offer a wide variety of dishes, both à la carte and set menus. There are three set menus to choose from: the Royal Set, which is the classic set of the restaurant, and the Ramayana Set, which includes the latest dishes for you to try. Dining at Royal Osha is truly an impressive experience.
What I love most about this place are three things: the stunning presentation of the dishes, the authentic Thai flavors presented beautifully, and the chance to taste dishes from all regions of Thailand, prepared using ten different cooking methods in a single meal. It’s an incredible dining experience!
“Enfinity”
Royal Osha, a Thai fusion restaurant, is a world-renowned spot on social media. This place has gained a reputation for elevating Thai cuisine to extraordinary levels, receiving high praise and top ratings from various media outlets. Moreover, it has brought back traditional Thai cuisine to life by giving it a modern twist with flavors that are beyond words.
As you step inside, you’ll notice a grand entrance with large doors. The interior is adorned with luxurious gold-themed decorations, giving it an extravagant feel. The predominant color scheme here is black and gold, with mirrored accents to make the space feel more spacious and airy. When you enter the dining area, you’ll experience a wide and open atmosphere.
Looking upstairs, you’ll find private zones beautifully decorated with intricate carvings. On the second floor, there’s a modern-style bar counter and a staircase spiraling upwards, with the ceiling adorned with golden chandeliers and crystals, creating a dazzling and beautiful sight.
The walls on the second floor are adorned with mural paintings depicting scenes from the epic Ramayana, particularly focusing on the character of Hanuman, depicted in large-scale paintings. Additionally, there are private rooms available for those seeking more privacy.
This time, I feel extremely honored to have received an invitation from the restaurant to attend the Hot Season Experience event, featuring this summer’s cuisine. Under the supervision of Chef “Wichit Mukura,” a renowned Thai chef and owner of a Michelin 1-star restaurant, they have prepared two special dishes for us: Southern Style Rice Berry and Thai Herbs Salad and Kao Chae. For foreign bloggers like us, this is our first time experiencing Thai cuisine like this. The presentation of the dishes was exquisite and beautiful, showing the chef’s attention to detail, making us instinctively reach for our phones to capture the moment. The Southern Style Rice Berry and Thai Herbs Salad had a harmonious blend of flavors, with a hint of sourness and spiciness. Mixing it together made the dish even more enticing, a perfect dish to stimulate the appetite. Another dish, Kao Chae Original by Royal Osha, was presented even more beautifully, making it irresistible at first sight. Along with fried items, fresh vegetables, and fragrant jasmine rice soaked in floral water, when eaten, the subtle fragrance of flowers adds to the experience. This was truly a first-time experience that shouldn’t be missed! For those interested in experiencing this special atmosphere, I recommend making reservations in advance. However, I highly recommend seizing the opportunity to taste it. Don’t miss out!

1. Royal Osha: Six Consecutive Years of Michelin Star Excellence!
The Michelin Star or Michelin Guide is an award that Royal Osha has received continuously for up to 6 years. This award serves as a testament to the excellent taste, quality, and service of each restaurant. Michelin’s assessment criteria evaluate the quality of ingredients, authenticity of the cuisine, and the integrity of the service. Assessors, who are knowledgeable and ethical, evaluate everything from the cleanliness, freshness, and safety of ingredients to the culinary techniques and uniqueness of each dish. They also consider the appropriateness of prices in relation to the quality of ingredients, taste of the food, and the service received. Moreover, restaurants must maintain their quality and standards consistently over time.
Michelin Star evaluations are conducted by inspectors from the Michelin Group, experts with extensive experience in the food industry, including restaurants, hotels, or related fields. These evaluations are based on strict criteria and ethical considerations, and inspectors have no affiliations with other organizations. They pay for their meals in full and evaluate restaurants anonymously to prevent preferential treatment. Each evaluation is a collective decision made by multiple inspectors who dine at the restaurant or use its services. Therefore, Royal Osha’s achievement of receiving the Michelin Star award continuously for up to 6 years is a guarantee of the quality and standards in food and services that diners can expect when experiencing Thai dining at a Michelin Star restaurant like Royal Osha.

K. Foodie.Muchies:
Royal Osha, hands down the best Thai spot in town! Their palace-style Khao Chae is a game-changer—so fragrant and refreshing, especially when the weather’s scorching like during Songkran. And let me tell you about the place itself—it’s like stepping into a dream, with these golden stairs and a chandelier that’s just wow. Oh, and they’ve bagged that Michelin Guide award five times in a row, so you know it’s gonna be good! Now, let’s talk about the star of the show—their Royal Osha Khao Chae Recipe. Chef Wichit Mukura’s masterpiece, let me tell ya. They serve up jasmine rice soaked in flower-scented water, decked out with all sorts of goodies like shrimp paste balls, stuffed shallots, you name it—all expertly crafted and beautifully presented.
And the taste? Oh man, it’s like a party in your mouth. Soft rice, cool water, and those sweet-salty sides? Talk about a refreshing combo. And don’t even get me started on their desserts—ice cream and sweet Marian plum? Yes, please! But wait, there’s more. Their other Thai dishes? Absolutely killer. The Tom Yum Goong? Rich and flavorful. The Green Curry? Aromatic and tender. And those Lotus leaf Wraps with Foie gras? Sweet, salty, sour, with a hint of spice—pure perfection. Trust me, you’re gonna love it all!
K. Hungrymoju:
“The Khao Chae festival is here, and this year I visited this restaurant for the first time. It’s still as grand and beautiful as ever. My mom requests it every year. The finale comes with a refreshing sweet Marian plum with refreshing and sour skin, very delicious. The granita is like a softly frozen ice, flavored and enjoyable. It’s available until the end of May.
We ordered the Stir fried Wagyu with Holy Basil, special A la carte, where they stir-fried the whole piece of beef. It was excellent, with good quality meat, not too fatty or tough. Pomelo Salad with Shredded Chicken and Fried Shrimp, I enjoyed them all alone. The portion sizes aren’t large, but the presentation is beautiful. It’s a luxurious restaurant with good flavors. I think it would appeal to foreigners too. It’s also Michelin Guide recommended.”

“One of the best Thai fine dining 💜 me love and recommend #michelinguide #bangkokmichelin @royaloshabangkok Delicious from the first dish to the last! The King Crab Leaf Wrapped, Tuna with Tartare Sauce and Yuzu Sauce, and Croquette Truffle are divine! 😍 😍 Spicy Abalone with Herb Salad, usually I don’t eat herbs in dishes, but this one was irresistible! Thai Lobster Coconut Soup is incredibly tasty, and the Stir fried Wagyu Sirloin with Thai spicy “Pad Cha” Sauce is outstanding. As for the desserts, they’re not overly sweet, which is perfect! 😍 The Black Sticky Rice Mousse, accompanied by a cloud-like rain cloud, is visually stunning and incredibly delicious. Chef Wichit’s skill is truly unmatched! 💕 💕 💕 This course is called “Rainy Season,” reasonably priced and perfectly satisfying. But it’s so delicious, I’ll be thinking about it for days to come. #royaloshabangkok #finediningbangkok #thaifinedining”

“A must-try Thai restaurant in Bangkok 🇹🇭 ❤🔥 At Royal Osha, the skilled chef prepares authentic, traditional Thai food using only the finest ingredients, infusing each dish with the true flavors of real Thai cuisine.
You should not miss out on this place’s most popular Tom Yum Kung. Large river prawns from Ayutthaya are grilled at Royal Osha for the ideal length of time to improve the flavor of the Tom Yum soup. To give the soup a unique flavor, it is served with mixed mushrooms and shrimp paste. You’ll be fascinated by the soup’s appearance as well. In a unique apparatus designed to emphasize the infusion process that gives the dish its distinctive and well-known flavor, the broth is slowly drizzled over the herbs and spices.”

“I would say “Classic Thai Elegance Reinvented” is the food concept at @royaloshabangkok ,a traditional Thai fine dining restaurant recommended by the Michelin Guide with Chef Vichit Mukura (presenting a special “Winter’s Set Menu”. All dishes were meticulously created from the finest ingredients of the season combined with special Thai herbs like Koon from the south. 1. The Origin of ‘Khao Chae’: A Traditional Thai Dish to Cool Off from Mon People
“Khao Chae” refers to cooked rice soaked in scented water infused with Thai jasmine flowers. It is typically served with side dishes and condiments to enhance its flavor, freshness, and roundness. This dish has been a popular choice for cooling down since ancient times, continuing to be favored today. The origins of Khao Chae can be traced back to the influence of Mon people during the reign of King Rama III. Initially used for royal ceremonies and offerings to deities during Songkran, the traditional Thai New Year, Khao Chae gained popularity among the general populace from March to May, the hot season and coinciding with Songkran festivities. In Mon language, Khao Chae is called “Peng Daak,” where “Peng” means rice and “Daak” means water. Initially, commoners were not allowed to consume Khao Chae as it was considered a royal dish, reserved only for royals or aristocrats. However, during the reign of King Rama IV, Queen Sri Suriyendra, also known as Chom Manda Jong, introduced Khao Chae to the royal court as a tribute. This marked the beginning of its popularity among the nobility, eventually spreading to the general public. Later, during the reign of King Rama V, the noblewoman Nuan Nilrat, who served in the royal court, further popularized Khao Chae by sharing the recipe beyond the palace walls. This transitioned Khao Chae from a royal delicacy to a beloved dish enjoyed by all, continuing its popularity to the present day.
2. Side dishes of Khao Chae and the correct way to enjoy this delicacy
When enjoying Khao Chae, it’s essential to pair it with side dishes and condiments to experience its delicious, refreshing, and aromatic flavors in the traditional Thai style. The side dishes for Khao Chae offer a variety of options, typically comprising both savory and sweet choices, usually around 6-7 items, including:
- “Luk Ka Pi” (Shrimp paste balls)
- “Moo Foi” (Fried shredded pork)
- “Hom Daeng Sod Sai” (Stuffed shallots)
- “Prik Yuak Sod Sai” (Stuffed bell peppers)
- “Chai-Poew Pad Waan” (Stir-fried sweet preserved radish)
- “Luk Kai Kem” (Salted egg yolk)
Additionally, there might be other side dishes or condiments depending on the recipe, often accompanied by vegetables and carved fruits such as sour mangoes, cucumbers, chilli peppers, spring onion, finger root flower, or jicama.
To properly enjoy Khao Chae, there are specific steps to follow, allowing diners to experience the authentic taste of traditional Thai cuisine. The correct way to eat Khao Chae is as follows:
- Start by enjoying the savory side dishes, such as shrimp paste balls, stuffed shallots, stuffed bell peppers, or salted eggs.
- Alternate between the side dishes and Khao Chae. This allows the flavors of the side dishes to blend harmoniously with the refreshing taste of Khao Chae, enhancing the overall experience.
- After cleansing your palate with the savory side dishes, proceed to enjoy the sweet side dishes, such as shredded pork or sweet stir-fried preserved radish. Once done, you can continue enjoying Khao Chae.
- Finally, after enjoying both the savory and sweet side dishes alongside Khao Chae, you can complement your meal with additional condiments such as vegetables or fruits to refresh your palate and complete the dining experience.
It’s important not to mix the side dishes directly into the Khao Chae, as this can dilute the authentic flavors of both the dish and the side dishes. This ensures that each component retains its unique taste, allowing diners to fully appreciate the flavors of Khao Chae and its accompanying side dishes.

“Royal Osha is like the ultimate Thai food experience! Their Palace-style Khao Chae is so good, especially on those scorching hot days when you just need something refreshing.
If you’re thinking of spending Songkran there, let me tell you, it’s fancy! The place itself is gorgeous, with this grand staircase all golden and a chandelier right in the middle shaped like a crown. And get this, they’ve been in the Michelin Guide for five years straight! So you can bet the food’s top-notch.
Their main deal is this Khao Chae called ‘Khao Chae Royal Osha,’ cooked up by Chef Wichit Mukura. It’s jasmine rice soaked in flower- scented water, served with a bunch of sides that they’ve put a ton of effort into. Shrimp paste balls, stuffed shallots, stuffed bell pepper with minced pork and shrimp, fried salted egg yolk, stir fried shredded pork with tamarind sauce, sweet stir fried black stingray and stir fried sweet preserved radish, all that good stuff, served with fancy veggies.
The rice is soft, they’ve got chilled water to sip on, and those side dishes, man, they hit the spot. And don’t even get me started on their desserts—ice cream and sweet Marian plum? Yes, please!
But it’s not just the Khao Chae; everything else they make is delicious too. Their Tom Yum Goong with big river prawns? Amazing. The Green Curry? Fragrant and tasty. And then there’s these wraps with Foie gras that are sweet, salty, sour, and smell like heaven with all those spices and flowers. Trust me, you gotta try it all!
K. porsajika:
“In this heat, Thais turn to Khao Chae for relief. The fragrant jasmine rice in flower-infused water paired with sweet and savory sides like shrimp paste balls, stuffed shallots, stuffed bell pepper with minced pork and shrimp, fried salted egg yolk, stir fried shredded pork with
tamarind sauce, sweet stir fried black stingray and stir fried sweet preserved radish complement each other perfectly. It’s a delicious and harmonious combination. If you haven’t experienced Khao Chae yet, you should definitely give it a try at @royaloshabangkok. Chef Wichit Mukura makes it incredibly tasty and satisfying.”

This Thai New Year, let’s go enjoy some Royal Osha Khao Chae together at @royaloshabangkok Seriously, it totally lives up to the Michelin Guide hype! Every ingredient is so flavorful: shrimp paste balls, stuffed shallots, stuffed bell pepper with minced pork and shrimp, fried salted egg yolk, stir fried shredded pork with tamarind sauce, sweet stir fried black stingray and stir fried sweet preserved radish. Served with fragrant jasmine rice, it’s so refreshing and perfect for this hot weather. You’ve got to try it!
K. bon_appetitbkk:
This summer, I got to experience Khao Chae at Royal Ocha for the first
time . I already knew Chef Vichit Mukura’s Khao Chae would be
amazing, based on my previous experiences with his cooking. The presentation was impressive, with dry ice adding a nice touch. But what really blew me away was the rice itself! Cooked with fragrant jasmine rice, it was just perfect and aromatic. Using Iceland Spring mineral water with a pH of 8.8 made it even more refreshing.
The 7 accompaniments for Khao Chae are absolutely delightful! You’ve got the full spread with shrimp paste balls, stuffed shallots, stuffed bell pepper with minced pork and shrimp, fried salted egg yolk, stir fried shredded pork with tamarind sauce(which is a unique touch), sweet stir fried black stingray and stir fried sweet preserved radish. Plus, there’s beautifully carved vegetables to complete the ensemble, topped off with fresh, refreshing slices of sweet Marian plums in syrup.
K. rosesfood:
“Let me start by saying, I have never tried Khao Chae before, ever. So, this time, I tried the “Khao Chae Chao Wang Recipe by Chef Vichit” at Royal Osha restaurant, which was a first in my life. It was quite an experience, everything was meticulously prepared and detailed.
Personally, I liked the salted eggs and the stir-fried shredded pork. The pork had a slight spiciness from being stir-fried with tamarind sauce, which balanced the sweetness perfectly. Even though they were fried, every time I ate the accompaniments, I alternated with Khao Chae to cleanse my palate, making me ready for the next bite. It was truly enjoyable.
As for the rice, it was fragrant jasmine rice floating in Thai flower- scented water. Rose thought the aroma was exceptionally special, not overpowering at all. Another special thing was the water used by the restaurant, with a pH value of 8.8, which helped to enhance the scent of the jasmine flowers.
After finishing, we ended with a dessert of sweet Marian plum in syrup, Traditional Ice Cream Rosella Flavour and fresh coconut”
K. hungrymoju:
“Having Khao Chae at our regular spot at home every year, it’s convenient, beautiful, and delicious. @royaloshabangkok The presentation is superb from start to finish. The restaurant even got a Michelin star! I brought my mom along, and she was so pleased. This year, we started with sweet Mariam plum, which was refreshing and sweet. We especially loved the rice; it was individually separated, not dry and hard like some other places (my mom loved it so much). All the fried accompaniments were done perfectly, not oily at all, crispy every time. We particularly enjoyed the fried salted egg yolk, which had a nice texture. The stuffed shallot with dried fish was sweet and salty; my mom loved the stuffed bell pepper, saying the pork was excellent, unlike anywhere else, along with the black stingray.
The complimentary desserts were incredibly delicious! The intense ice cream wakes you up with every bite, we loved it so much. It’s like a wake-up call, especially with the pineapple and salted chili. We loved it!”
K. foodtrackinbkk:
“@royaloshabangkok #TheUltimateKhaoChae!! From someone who’s never had Khao Chae before, this place is the real deal! Delicious to the
point of singing praises! Backed by a fine dining establishment
that’s been awarded the Michelin Guide for 5 consecutive years .
They even provide instructions on what to eat with what to make it taste good, and following them doesn’t disappoint. No wonder they’ve earned Michelin stars! 🤩 Truly delicious. I wish everyone could try it. Each dish is meticulously crafted, with flavors that are incredibly refined. You can tell a lot of thought has gone into them.”
oatkomkrich:
“Whenever it’s Khao Chae season, I always think of
@royaloshabangkok as my first choice .
The highlight of Khao Chae here is the incredibly fragrant flower- scented water, served with all 7 traditional accompaniments: shrimp paste balls, stuffed shallots, stuffed bell pepper with minced pork and shrimp, fried salted egg yolk, stir fried shredded pork with tamarind sauce(which is a unique touch), sweet stir fried black stingray and stir fried sweet preserved radish, enjoyed with fresh vegetables.
One great thing about this place is that they provide a menu leaflet before the course starts, indicating which dish should be paired with
which condiment and vegetable to complement each other perfectly. This enhances the dining experience. And for desserts, they serve sweet
Marian plum in syrup, a refreshing end to the meal .”

So yeah, if you’re looking for a spot where you can chow down on amazing food and get treated like royalty, this is it.“

Thai fine dining joint is all decked out in this swanky, modern style. You can’t miss the massive black door at the front—it’s like the gateway to luxury. Once you step inside, the staff whisk you to your table with all the grace in the world. And let me tell you, their service? It’s flawless. They start you off right with a welcome drink, and then, the chef sends out these little appetizers that just blow your mind. And that’s just the beginning—the taste, the service, the whole vibe of the place? A+ across the board.
- Pookeats:
“This is another restaurant I pass by often, but I never thought to stop and try because I assumed the taste would be modern Thai fusion like many other restaurants. However, I was mistaken. The chef still maintains the original Thai flavors but elevates ordinary Thai dishes to be more interesting and sophisticated. The menu items are meticulously presented, and the staff takes care to inquire about each customer’s food allergies, demonstrating their attention to customer safety. They explain each dish thoroughly, leaving no gaps. The recommended sequence for tasting the appetizers ensures that the flavors complement each other perfectly. Overall, it’s a deal that’s really worth it. It has all the components—beauty, traditional flavors with a modern touch, the aromatic scent of incense, and interesting food textures. Moreover, the staff provides excellent service without being intrusive.”
- Mr. Stew:
“Royal Osha (Ruangrudi) is a luxurious Thai restaurant with a contemporary Thai decor that looks up-to-date, and the presentation of the food is impressive. They offer Thai ingredients, beautifully and deliciously presented in each dish. The ambiance and service are excellent. They take care of customers from a distance, replacing any worn-out dishes promptly. This type of service is appropriate for the service charge. It’s unlike many other places where they charge a service fee but you still have to call for service. I recommend it to anyone with friends or foreign guests. Royal Osha is suitable for everything.”

“Khao Chae” – A must try refreshing dish for the hot season For true food enthusiasts.
Even though the hot season coincides with the Songkran festival, a time when many people return home to visit family or travel comfortably, it’s also a period characterized by extremely hot weather. Everyone seeks ways to cool down and refresh themselves, whether through water activities, drinking cold water, or choosing foods that provide internal and external freshness. One such option is “Khao Chae,” a popular dish during the hot season because of its fragrance, coolness, and deliciousness. Eating Khao Chae offers a delightful experience of aroma, coolness, and satisfaction simultaneously. In this article, Royal Osha introduces the “Khao Chae Original by Royal Osha,” a hot season cooling dish from Royal Osha, explaining what it is, its accompanying side dishes, how to eat it, and recommending Fine Dining set menu options for the hot season. These dishes help diners fully enjoy relief from the hot weather.
1. What is ‘Khao Chae’? Why is it a must-eat dish during the hot season?
“Khao Chae” is a dish that involves soaking cooked rice in jasmine- scented water, typically served with side dishes and condiments to create a well-rounded and refreshing flavor. When eaten, it offers a delightful aroma and coolness, effectively combating the heat. The tradition of Khao Chae dates back to the third reign of the Ayutthaya period in Thailand, known in the Mon language as “Peng Dajak,” where “Peng” means rice and “Dajak” means water used in religious ceremonies to pay homage to deities during the Songkran festival. In the fourth reign, Khao Chae gained popularity as a palace dish when Princess Sorn Kaew, the consort of King Rama IV, presented it as a royal offering. Later, it was introduced to the public, and during King Chulalongkorn’s reign, it became widely known when Princess Nilrat, who managed the royal kitchen, shared the dish with the people of Phetchaburi Province. Over time, Khao Chae transitioned from a palace dish to a popular delicacy enjoyed by the general public, particularly during the hot months from March to May. Its association with the Songkran festival and its ability to provide a refreshing and aromatic dining experience have made Khao Chae a beloved dish during the hot season.
2. What are the side dishes of Khao Chae? And why is it necessary to eat Khao Chae with side dishes?
The side dishes accompanying Khao Chae are essential to enhance its flavor, aroma, coolness, and overall enjoyment, following the traditional style of ancient Khao Chae. Typically, there is a variety of side dishes available to accompany Khao Chae, including:
- “Luk Ka-Pi” (Shrimp Paste Balls): These are made from snakehead murrel or grilled catfish mixed with lemongrass, finger root, shallots, shrimp paste, and coconut cream. They are formed into small balls, coated with a mixture of flour and egg, then deep-fried until golden yellow.
- “Moo Foi” ( Fried Shredded Pork): This side dish is made by boiling pork until tender, then shredding it into small pieces and frying it with sugar until it becomes sweet and caramelized.
- “Hom Daeng Sod Sai” (Stuffed Shallots): Made from snakehead murrel or grilled catfish mixed with herbs until sticky, then formed into small balls and stuffed into shallots. They are coated with a mixture of flour and egg, then deep- fried until golden yellow.
- “Prik Yuak Sod Sai” (Stuffed Bell Peppers): This dish is made from shrimp or pork mixed with fat minced finely until smooth, then seasoned and steamed until cooked. Afterward, they are wrapped with bell peppers and fried eggs.
- “Chai-Poew Pad Kai” (Stir-fried Preserved Radish with Eggs): Preserved radish is stir-fried with palm sugar or brown sugar until it’s sweet and salty, creating a harmonious flavor.
- “Luk Kai Kem” (Salted Egg yolk): These are salted duck eggs that are formed into small balls, coated with a mixture of flour and egg, then deep-fried until golden yellow.
Apart from the side dishes mentioned earlier, there may be additional side dishes as well, depending on each person’s recipe. These may also come with complementary vegetables and carved fruits such as sour mango, cucumber, goat peppers, spring onions, finger root flowers, or jicama. When served alongside Khao Chae, they create a harmonious taste, fresh aroma, and rounded flavor that allows tasters to experience the authentic ancient Thai taste in every bite.
3. How to properly enjoy “Khao Chae” to truly taste the deliciousness in the ancient Thai style?
Although “Khao Chae” is a dish renowned for its fragrant, fresh, and rounded flavor, typically enjoyed during hot weather and seemingly adaptable to various eating styles, there are indeed specific steps to properly enjoy it in order to experience the authentic ancient Thai taste. The steps for consuming “Khao Chae” are as follows:
- Start with savory side dishes: Begin by consuming the savory side dishes first, such as shrimp paste balls, stuffed shallots, stuffed bell peppers, or salted egg yolk.
- Enjoy the “Khao Chae”: After finishing the savory side dishes, proceed to enjoy the “Khao Chae” itself. This step enhances the freshness, and when combined with the flavors of the savory side dishes, it elevates the overall taste.
- Indulge in sweet side dishes: Once you’ve finished with the “Khao Chae,” you can then move on to enjoy the sweet side dishes such as sweet shredded pork and stir-fried preserved radish with eggs. Afterward, you can continue enjoying the “Khao Chae.”
- Accompany with additional refreshments: Finally, after consuming the savory, sweet side dishes, and “Khao Chae,” you can complement the meal with refreshing accompaniments such as sour mango, cucumber, chilli peppers, or spring onions. This helps to further enhance the rounded flavor.
It’s important not to mix the side dishes directly into the “Khao Chae” as it may diminish the aroma of the dish and result in a mingling of flavors, hindering the ability to fully appreciate the distinct tastes of both the “Khao Chae” and the side dishes.

Introducing the Michelin Guide and Reasons Behind the Popularity of Restaurant Michelin Guide
The Michelin Guide is an award that many food enthusiasts are likely familiar with and hold in high regard. This is because the Michelin Guide award guarantees the quality and standards of restaurants, whether it’s regarding the ingredients used in cooking, the cooking process, menu presentation, value for money, or customer service. These establishments must pass rigorous evaluation criteria from Michelin Guide restaurant inspectors to be awarded the prestigious Michelin Guide accolade. Moreover, if a restaurant consistently receives this honor for several years, it signifies its ability to maintain exceptional quality and standards.
Therefore, in this article, we’ll explore what the Michelin Guide is, its evaluation criteria, who the inspectors are, and the reasons
behind the widespread popularity of Michelin Guide restaurants. Additionally, we’ll introduce “Royal Osha,” a fine dining Thai restaurant that has been honored with the Michelin Guide award for up to 6 consecutive years, a must-visit for true Thai food enthusiasts.
1. What is the Michelin Guide? Why do Thai and international food enthusiasts prefer dining with Restaurant Michelin Guide?
The Michelin Guide is a travel guidebook created by the French tire company Michelin. Within the guidebook, you can find travel information, tourist destinations, and various restaurants worth visiting. When traveling through certain routes, especially in France, there are short reviews and rankings for different types of restaurants, including luxurious dining, fine dining, street food, or general restaurants. Every restaurant has the chance to receive a Michelin Guide rating because the evaluation criteria of Michelin Guide focus on real quality, ingredients, and genuine service. The inspectors, who possess integrity, understanding, and profound knowledge of the food industry, conduct evaluations. Therefore, the Michelin Guide award serves as a guarantee of the deliciousness, quality, and excellent service of each restaurant. This assurance leads both Thai and international food enthusiasts to prefer dining with Restaurant Michelin Guide.
2. Criteria for Evaluating Restaurant Michelin Guide and Requirements for Michelin Guide Awards
In evaluating Michelin Guide restaurants, inspectors use the same set of criteria to ensure assessments align with Michelin standards. Only when a restaurant meets all the criteria does it receive a Michelin Guide award. The evaluation criteria for Michelin Guide include:
- Quality of Ingredients: This criterion assesses the overall quality of ingredients used in the restaurant, consideringfactors such as cleanliness, freshness, and safety.
- Culinary Techniques: Inspectors evaluate the culinary techniques employed in food preparation and presentation. They assess whether chefs can skillfully extract flavors from ingredients, demonstrating expertise, mastery, and refinement.
- Chef’s Unique Identity Expressed Through Cuisine: This criterion evaluates the unique identity of the chef conveyed through the food, ensuring that the restaurant’s menu reflects the chef’s distinctive style, making the dishes of Restaurant Michelin Guide stands out.
- Value for Money: Evaluators consider whether the price of the food is commensurate with the quality of ingredients, taste, and service provided by the Restaurant Michelin Guide.
- Consistency: This criterion assesses the consistency of the restaurant’s quality and standards across all aspects, ensuring that the restaurant maintains its original quality and standards. Consistency in maintaining standards is a key expectation of Michelin Guide.
These criteria collectively ensure that Michelin Guide restaurants consistently deliver exceptional quality, making them worthy of receiving Michelin Guide awards.
3. Who are the evaluators of Restaurant Michelin Guide and what does each Michelin Guide star mean?
The inspectors of the Restaurant Michelin Guide are Michelin Group- appointed inspectors who are experts with experience in the food industry, restaurants, hotels, or related fields. This ensures that all evaluations adhere to Michelin standards and are based on the inspectors’ integrity, understanding, and genuine knowledge.
Michelin Guide inspectors have no affiliations or relationships with
other organizations. They pay the full cost for each meal and conduct evaluations anonymously to prevent special treatment or bias. Evaluations and decisions are made collectively among multiple inspectors who visit and dine at a Restuarant Michelin Guide. This ensures that Michelin Guide’s quality and standards are highly reliable, providing assurance to food enthusiasts that awarded restaurants meet Michelin Guide standards unquestionably. As for Michelin Guide awards, many food enthusiasts recognize them through the term “stars.” Stars are divided into three categories, each with its meaning:
- Michelin Guide 1 Star: Represents a Michelin Guide restaurant of high quality worth stopping by to experience.
- Michelin Guide 2 Stars: Represents an excellent Michelin Guide restaurant worth a detour from the planned route to visit.
- Michelin Guide 3 Stars: Represents an exceptional restaurant worthy of a special trip, often located farther away, for an extraordinary dining experience.

It’s served with various accompaniments such as lotus stem, white turmeric, and eggplant. This dish is considered a traditional Thai dish dating back to ancient times and is another example of a well-rounded, flavorful Thai dish that includes sweetness, richness, saltiness, and sourness, making it a must-try for true Thai food enthusiasts.
4.3 “Hokkaido Scallop and Acacia Leaves And Pickled Garlic and Bitter Nut in Red Curry”
is a Michelin menu crafted from exquisite ingredients such as Hokkaido scallops from Japan. These scallops are grilled to perfection, imparting a delightful aroma, and served with a red curry sauce made from a special recipe from the southern region of Thailand. The curry sauce is infused with the heat of various herbs such as stink beans, climbing wattle, and Wild Betel Leafbush leaves, along with the addition of toppings like ikura or salmon roe, which help balance the flavors of spiciness, saltiness, and sweetness harmoniously.
4.4 “Thai Style Spicy and Sour Soup with Octopus Tentacle”
is a Michelin menu crafted from premium ingredients, particularly the giant octopus tentacle, carefully selected for its freshness and tenderness. The tentacles are firm yet succulent, perfectly cooked to achieve the ideal texture. They are served with a golden-yellow broth made from meticulously prepared kumquat, which contributes to the rich and tangy flavor profile of the soup. The broth is infused with a variety of herbs and spices, resulting in a complex and aromatic taste. Additionally, the dish is garnished with “syphon,” which helps enhance the fragrance by drawing out the aromatic oils from the herbs and spices into the broth.
4.5 “Seared Red Grouper with Thick & Creamy Red Curry ‘Che Che’ Sauce and Grilled Australian Wagyu Beef Striploin with Spicy ‘Nam Tok’ Sauce Served with Pickled and Grilled Vegetables”

“This summer, I had the opportunity to dine at Royal Ocha for the first time. Before coming, I was informed that the signature dish here, the Khao Chae, is crafted by Chef Witchit Mukura, which got me very excited as I have previously been impressed by his culinary creations.
First and foremost, the presentation was spectacular, with dry ice smoke billowing out, creating a refreshing atmosphere. But what truly stole the show was the rice! The chef used fragrant jasmine rice, beautifully arranged and incredibly aromatic and tender. As for the accompanying chilled jasmine-infused water, it was extraordinary. The chef used Iceland Spring pH8.8 mineral water, clear and refreshing. It was exceptionally good, unique and delightful. I loved it!
The seven side dishes served with the Khao Chae were all exceptional. From the fermented shrimp paste to the stuffed shallots with minced dried fish, stuffed chili, fried salted egg yolk, stir-fried pork with tamarind sauce (which was unlike any I’ve had before), sweet stir-fried fish, and stir-fried sweet preserved radish, including intricately carved vegetables. The meal ended with sweet yellow Marian plums which were refreshing!”

“This restaurant is one I’ve driven past many times but never thought to stop and try, assuming it would be another Thai fusion place. I was wrong all along because the chef maintains the authentic Thai flavors while elevating traditional Thai dishes to be more interesting.
Initially, I was slightly unimpressed by the parking situation, having to walk up and down stairs from the parking area, which was quite far from the restaurant. However, after dining and experiencing everything, I must say I was thoroughly impressed. Everything from the ambiance, service from all staff, presentation of dishes, and taste, including the drinks ordered outside the deal.
The menu curated for the set showcased the chef’s dedication and the team’s intention in presenting the dishes. Everything from appearance, taste, and aroma was well-executed. I appreciated how the staff asked about each customer’s food allergies, showing their concern for customer safety. They also thoroughly explained each dish served, ensuring no details were missed, including the origin and highlights of each ingredient. Additionally, they recommended the sequence of eating
for the appetizer dishes, allowing flavors to complement each other perfectly.”
