This year, the Royal Osha Khao Chae features 7 exquisite side dishes made from the finest ingredients, following the authentic royal recipe, with a special 8th side dish added – Stuffed Sweet Mushroom – as a plant-based option for vegetarian lovers. One word to describe it all: refreshing! It’s a truly special meal, filled with cooling aromas and bold flavors, enjoyed in an atmosphere of modern Thai luxury that’s both elegant and relaxing.

We began with some light appetizers:

  • Mango with Sweet Fish Sauce & Ma Hor – bite-sized starters bursting with flavor. The mango with sweet fish sauce has a tangy and nutty taste, stuffed with dried shrimp, shallots, and fresh chili. The Ma Hor combines a sweet-salty filling with fresh pink guava.
  • Spicy Marian Plum Salad (Yum Mayong Chid) – refreshingly sour and savory, made from carefully selected Marian plums tossed with chili, shallots, dried shrimp, and dried prawn powder.

Then came the highlight:
Royal Osha’s Royal Khao Chae with 8 side dishes. The rice is soaked overnight in mineral water (pH 8.8), delicately infused with floral aromas, and served with fragrant Sao Hai jasmine rice grains floating in floral-scented iced water.

The side dishes included:

  • Shrimp Paste Balls – the heart of Khao Chae, perfectly bite-sized, paired with fingerroot and champaca flower.
  • Stuffed Shallots with Dried Fish Floss, served with cucumber and spring onion rolls.
  • Stuffed Chili with Minced Pork & Shrimp, paired with cucumber and mango.
  • Deep-fried Salted Egg Yolk, crispy on the outside and soft inside, served with sour mango and spring onion.
  • Shredded Pork with Tamarind Chili Paste, rich and savory, paired with cucumber.
  • Sweet Stir-fried Ray Fish, paired with sour mango.
  • Stir-fried Sweet Preserved Radish, served with cucumber and spring onion.
  • Stuffed Sweet Mushroom (special for this year) – made with Termitomyces mushrooms, naturally fragrant, sweet, and crunchy.

To finish, we had Som Chun Granita – a traditional Thai-style dessert with a refreshing balance of sweet and tangy flavors, perfect for cooling off.
